After seeing the movie Tangled, and watching it over, and over, and over again, my daughter wanted a Rapunzel cake for her 4th birthday. So, this is what I made her, and she LOVED it!
The Rapunzel doll I used is smaller than a Barbie. The doll comes with a fabric skirt you can remove. To keep her hair above the cake, I braided and rested it on her arm.
I wanted to focus on the decorating part more than the baking part, so I used box mix.
I used 3 boxes in a deep stainless steel bowl. Right before adding the cake batter, I oiled the entire inside of the bowl with grapeseed oil and then sprinkled a coating of sugar on top to help prevent the cake from sticking to it.
I followed the baking instructions on the box for a bundt cake. It took about 25 extra minutes or so. I usually check my cakes with a tooth pick, but since this was deeper, I used a skewer.
When the skewer comes out clean, after sticking it in the center of the cake, it’s done. 👍 I flipped the cake out of the pan, while it was still hot, then let it cool.
I washed and dried the doll and set it aside. Little by little, I cut out the middle of the cake, checking often to see if the doll would fit. Once it did, I was ready to icing the cake into Rapunzel’s dress.
I used purple and some pink icing, since my daughter requested both colors. For the last step, I used mini marshmallows around the bottom of the cake!
