Easy Mini Pepper Meat Bites🌶

Mini Pepper Meat Bites are cute, little meatloaves cooked inside mini sweet pepper rings. They are just the right size for appetizers or game day snacks!

This recipe is very simple

I used to hate meatloaf growing up, but then I started making it myself, and this is a meatloaf I liked.

I say liked, because I haven’t eaten meat for quite a few years now. My husband and children do, so this recipe still lives on.

Sometimes, my son will help, which is great because I don’t have to handle the meat. At age 11, his hands are already bigger than mine! Better for mixing, right?😄



Before starting the meatloaf, slice the mini peppers into rings. I usually get 2, maybe 3, rings per pepper. Place them on a broiling pan and set aside. My pan fits 28 rings.

Pre heat the oven to 375 F°

Mix by hand, in a large bowl
• 2lbs Ground Beef
• 1 cup Italian Seasoned Bread Crumbs
• 1/3 cup ketchup
• 1 large egg



Left over pepper scraps can also be added, or onions, fresh herbs, etc.

I start with 2 lbs of ground beef, which would give you a lot of mini pepper meat bites, if you choose, but I divide it between pepper bites and meatloaf.



First, I fill the pepper rings with small portions of meat and then make a loaf out of whatever is left. I’m guessing, about 1 1/2 lbs for the meatloaf, and about 1/2 lb for the mini pepper bites.



At 375 F°

Bake the mini pepper meat bites on a broiling pan for about 15 minutes

Bake the meatloaf on a baking pan, lined with foil, for about 45 minutes

Mini meatloaves can be made instead and will bake about 30 mins, depending on the size

The mini pepper meat bites can be upgraded to mini pepper loaves by using full sized bell pepper rings and will also bake for about 30 mins
