Potato Pumpkins

Potatoes are probably my favorite food… mashed, baked, fried, shredded, scalloped, they are delicious πŸ₯”πŸ˜‹πŸ’œ

To make these pumpkins, I used shredded potatoes. Shred them yourself with this Salad Shooter or pick up a bag of frozen preshredded potatoes from the store

A small cast iron skillet and a large spatula make it easy to shape the potatoes into circles

Add a bit of grapeseed oil oil or butter to help the potatoes get crispy

The stems are sausage links cut in half, green pepper slices could be used instead

Kids can cut up their fried eggs and create jack o lantern faces on their potato pumpkins

Add a little blood (ketchup) and you’ll have some awesome Halloween pumpkins to eat πŸŽƒ

For something sweeter, sprinkle some cinnamon sugar on top of your hot, buttery, potato pumpkin

Using sweet potatoes would be even sweeter
